You could basically have almost any combination of "looks" and "feel" no matter which distro you choose, it's just arranged differently under the hood.

There's too many mobile / touch screen optimized (or feels like it) user interfaces as default these days IMO. Some of these may be more mature in a way that they're stable and some may have a lot of extras but being actively updated to the latest and greatest means occasional bugs.
